Mercato Metropolitano is proposing to introduce a new factory concept for this site. In addition to the MM signature mix of micro-restaurants and high-quality sustainable food concepts from around the globe, the intension is to mill selected heritage and organic grains on site. MM will then use this product to create bakery, patisserie and pasta products on site.

It is planned that the flour and production activities will service the other MM markets around London, improving the quality of their products and positively impacting the MM carbon footprint in terms of distribution.

The overall Elephant Park site extends to approximately 1650msq over 2 defined areas and is split into two distinct areas separated by access to the residential units above.

A delicatessen is situated at the western part of the site and is bounded by Walworth Road to the west and Walworth Square to the south.

The Central and East halls are located at the east of the site and are bounded by Sayer Street to the east and Walworth Square to the south. This area extends to approximately 1270msq with back of house of 571msq the remaining 699msq is for customer use.
